Looking for something creative to do with Salmon?  Look no further!  Check out this delicious salmon recipe created for Ruccello Olive Oil by Ann Tonini.
Ingredients:
2 pounds fresh salmon filets
Sea Salt
Garlic Power
Crust Mixture:
     1/2 cup ground pistachios
     1 cup panko bread crumbs
     6 sprigs of thyme chopped
     Zest of one orange
     Ruccello Olive Oil, Picual
Directions:
Make the Crust Mixture by adding the pistachios, panko bread crumbs, thyme, and orange zest and mix together.  Then,  add enough olive oil to bind the ingredients together.
Pat the salmon filets dry with a cloth or paper towel and place on an oiled baking sheet or BBQ pan.
Season with salt and garlic powder.
Top the filets with crust mixture and pat out to cover the entire piece of salmon.
Baking:  Preheat oven to 350 F.  Place salmon in the oven and bake for 15-20 minutes depending on the thickness of the salmon.  The internal temperature should reach 145 F.
Kettle BBQ:  Prepare briquets.  Place salmon pan on grill and grill for around 6-8 minutes without turning.
