This balsamic is produced by combining balsamic vinegar with artisanal Italian honey and reducing the blend over open-air fire. The reduction is then placed in oak barrels for aging. When the balsamic reaches the density of 1.31 the product is removed from the barrels and lightly filtered. This balsamic is fabulous drizzled on cheeses like Roquefort, Gorgonzola, Taleggio , Fossa, and Provolone. It also pairs well with dishes using walnuts or pears, or game dishes like hare, wild boar, or pheasant.
