Thanksgiving is just a few weeks away dawning that time of the year where we take time to reflect and give thanks.

I’m grateful for so many things this year…

My family.

My friends who feel like family.

And, fat.

Yes, you heard that right: FAT.

I don’t know about you, but I look forward to the Thanksgiving meal all year long.

The golden turkey, the delicious stuffing, pies, cakes, all of it!

And you know what makes it all taste so good? FAT.

A few days ago my friend, Dana, recommended that I watch a new Netflix series call Salt Fat Acid Heat about a chef who travels the world experimenting with these most essential elements of cooking.

The first episode was all about Olive Oil – fat.

The fat in our food enhances the flavor and triggers feelings of satisfaction in our brains (there are even scientific studies that prove this — here and here).

Fat makes our food crispy, smooth and creates a pleasing sensation in the mouth by influencing our taste receptors.
