Need a quick and delicious meal that’s also a little different? Check out this recipe I found on Valerie’s Kitchen to whip up a couple of Mahi Mahi fillets I bought at Costco…

Kickin’ Cajun Spice Mix:

In a small bowl, combine:

1-1/2 teaspoons onion powder

1 teaspoon each of:

  • smoked paprika
  • oregano
  • garlic powder
  • thyme
  • salt

1/2 teaspoon each of:

  • black pepper
  • cayenne pepper. (Adjust the cayenne to your taste. This recipe was a little spicy.)

To make the fish:

First, pat the fish dry with paper towels and rub the spice mix on both sides of the fish.

Next, melt 2 tablespoons butter and 1 tablespoon Ruccello Olive Oil in a large skillet over medium-high heat.

Heat the pan of your choice as hot as it can get, without burning the butter, and add the seasoned Mahi Mahi. You want that nice sizzle when the fish hits the pan!

Cook the Mahi Mahi for 3 to 4 minutes on each side until nicely golden brown.

You don’t want to overcook it so be vigilant and pull the pan off the heat as soon as it’s cooked through and flakes easily with a fork.
